The first syrnyk went into the pan as a patty and became a puddle. Adding flour helps
a little and makes them taste of dough. The problem is almost never the recipe.
The curd was too wet
Cottage cheese is sold sitting in liquid;
tvorog is pressed.
A recipe written for the second one will not work with the first, and no amount of flour
compensates — it only trades one problem for another.
The fix: line a sieve with cheesecloth, tip the tub in, leave it in the
fridge for an hour, then press gently. This is the step almost every recipe leaves out
and the one that decides the outcome.
Thawed frozen curd is wetter still and needs draining twice.
Then, if it still spreads
Not enough binder. Per 500 g of curd: one egg and 2–3 tablespoons of flour
or semolina. Below that there is nothing holding it together.
Semolina instead of flour. It absorbs moisture as the mixture stands —
which is exactly what a wet mix needs. Use it in place of the flour and rest the mixture
15–20 minutes before shaping. Firmer batter, lighter result.
If they break when you turn them
Turned too soon. Wait for a firm golden edge — three to four minutes on the first side.
If it drags when nudged, it is not ready.
If they stick
The pan was too cool or there was not enough fat. A crust has to form quickly to hold the
shape; on a lukewarm pan the pancake spreads and sticks before it sets.
If they collapse in the middle
Made too big. Keep them around 6–7 cm across and 1.5 cm thick —
large ones give way under their own weight before the centre sets.
Matching symptom to cause
| In the pan | Why |

| Broke when turned | Turned early, or too little binder |
| Stuck to the pan | Pan too cool or too little fat |
| Raw in the middle, dark outside | Heat too high, or made too thick |
| Rubbery | Too much flour |
