What Is Holubtsi?

Holubtsi — “little doves” — are cabbage leaves rolled around a filling of rice and minced
meat and braised slowly in a tomato and sour cream sauce. The dish is really a sequence,
so it is best explained as one.

Step 1. Soften the leaves

Three ways, and they are not equal.

  • Freezing. Whole head in the freezer for a day, then thaw. Leaves come
away soft and pliable with no boiling at all. Easiest by a distance —
    see freezing cabbage.
  • Boiling. Core the head, lower it into boiling water, peel leaves away as
they soften, 2–3 minutes at a time. Traditional and fiddly.
  • Microwave. Whole head, 5–8 minutes, then peel. Fast, but the outer leaves
overcook while the inner ones stay stiff.

Step 2. Shave down the rib

The thick central rib of each leaf, flattened with a knife. Skip this and the leaf cracks
as you roll it.

Step 3. Par-boil the rice — five minutes, no more

Round or short-grain rice, and roughly one part rice to three parts meat
by volume. Rice swells inside the roll; too much of it, or fully cooked rice,
gives a dense mealy filling that splits the leaf.

Par-boiled rice finishes cooking in the pan, absorbing sauce as it goes —
which is where the flavour comes from. Long-grain works but stays separate and dry;
round rice releases starch and binds the filling.

Step 4. Fry the base

Onion and carrot in fat, some into the filling and some into the sauce.
This is the step that makes the dish taste of something.

Step 5. Roll them, seam down

Filling at the stem end, sides folded in, roll away from you.

Step 6. Pack tightly and weigh them down

Seam-side down in a heavy pot, snug against each other. Cover with sauce and put a plate
on top to keep them submerged. Line the bottom with spare leaves so the lowest layer
does not catch.

Step 7. Braise gently, 1–1.5 hours

They should barely simmer. A hard boil unravels them — this is the most common failure
and the easiest to avoid.

The meat-free version is not a compromise

Lenten holubtsi with rice, mushrooms and fried onion are standard at Christmas Eve
alongside kutia,
not a modern substitution.
