If you’re looking for an appetizer that disappears within minutes of hitting the table, these tuna puff pastry bites are about to become your new go-to. Picture crisp, golden squares of flaky puff pastry crowned with a cloud of creamy tuna filling, piped on in pretty little rosettes and finished with fresh herbs, olives, and tangy pickles. They look like something from a fancy catered party, but you can whip them up in your own kitchen with just a handful of pantry staples.

Canape-style appetizers like these have long been a staple of festive and buffet tables across Ukraine and Eastern Europe, where the art of the zakuska (the small snack served before or alongside a meal) is taken seriously. Home cooks there have always been resourceful, turning a tin of fish and a wedge of soft cheese into something elegant enough for a holiday spread. This particular version leans on store-bought puff pastry, a modern convenience that lets you skip hours of laminating dough while still delivering that signature buttery crunch.

The secret to success here is twofold. First, don’t roll the pastry too thin or your squares won’t puff into those lovely airy layers, and leave plenty of room between them on the baking sheet because they spread as they rise. Second, drain your tuna really well and mash out any large chunks so the filling pipes smoothly. A piping bag with a star tip gives you those bakery-worthy swirls, but a zip-top bag with the corner snipped off works in a pinch.

Tips & Substitutions

  • Cheese: Ricotta keeps the filling light and airy, but full-fat cream cheese makes it richer and more spreadable. Either works beautifully.
  • Tuna: Use tuna packed in oil for the most flavor, but water-packed is perfectly fine if you prefer a leaner bite. Drain it thoroughly either way.
  • Mustard: Dijon adds a gentle warmth, while whole-grain mustard gives a little texture and pop. Start with less and taste as you go.
  • Lighter version: Swap the mayonnaise for Greek yogurt or sour cream to cut the richness without losing creaminess.
  • Toppings: Capers, a sprinkle of dill, thin radish slices, or a twist of lemon zest all make lovely finishes.

Serve these bites right away while the pastry is at its crispest, arranged on a pretty platter and scattered with greens. If you need to prep ahead, bake the pastry squares and store them airtight at room temperature for up to a day, then whip up the filling and assemble just before your guests arrive. Once topped, they’re best eaten the same day, since the pastry softens as it sits. Leftover filling keeps in the fridge for two to three days and makes a wonderful sandwich spread the next morning.

Ingredients

  • 250 Grams
    puff pastry
  • 1 Piece
    canned tuna
  • 250 Grams
    ricotta cheese (or cream cheese)
  • 2-3 Tablespoons
    mayonnaise
  • 1-2 Teaspoon
    mustard

Instructions

  1. First, thaw the puff pastry, then roll it out lightly with a rolling pin so the sheet is even and not too thick.

  2. Cut the rolled-out dough into equal squares and arrange them on a parchment-lined baking sheet, leaving a little space between them since the pastry will rise.

  3. Bake in an oven preheated to 220C (about 425F) for roughly 10 to 15 minutes, until the squares have puffed up and turned golden. These will be the base of your appetizer.

  4. Meanwhile, prepare the filling: drain the oil from the tuna, and if the fish is in large pieces, mash it a little with a fork.

  5. Add the cheese to a bowl along with the tuna, mayonnaise, and mustard. Mix everything thoroughly until you have a smooth, tender mass.

  6. Transfer the filling to a piping bag fitted with a decorative tip and gently pipe small portions onto the baked pastry squares.

  7. Arrange the finished bites on a platter and garnish with fresh herbs, olives, and pickled cucumbers. Serve at a festive or buffet table.
