Torshi (Marinated Vegetable Mix)
Torshi is the Armenian and Black Sea take on a layered pickle — served fiery, alongside grilled meat and young wine. What sets it apart from an ordinary mixed pickle is the packing: vegetables go in tight layers, heavily strewn with celery, parsley, and dill, so the herbs perfume the whole brine rather than just sitting on top.
Two speeds
The quick route is a short ferment — hot brine on, a day at room temperature, two more in the fridge, ready on day three. For the winter version you scald the vegetables twice with boiling water, then sterilize the sealed jars for 30 minutes so they keep until spring.
On heat and texture: eggplant is the traditional swap for zucchini, giving a denser, almost meaty bite. The hot peppers and five or six heads of garlic make this genuinely spicy, so scale them to taste. Boil the beans (about 1 kg / 2.2 lb) beforehand — raw, they never marinate through and stay tough.

Boil the beans, clean them, and cut them into 2 to 3 pieces.
Shred the cabbage into large squares, cut the carrots into rounds, the peppers into wedges, the zucchini into rounds, and the garlic into pieces.
Layer all the vegetables, scattering herbs between the layers.
Make the marinade: to 1.5 liters of water add 2 tablespoons of salt and 1 tablespoon of sugar.
Pour the boiling marinade over the vegetables, leave for a day at room temperature, then place in the refrigerator. On the third day the torshi is ready to eat.
If canning for winter
On the 2nd or 3rd day, drain off the brine, boil it, and skim off the foam.Pour boiling water over the vegetables twice, draining each time, then pour on the boiling brine.
Sterilize for 30 minutes and seal.
