There is something deeply comforting about a plate of cherry varenyky arriving at the table, glistening and hot, with a pool of sour cream slowly melting alongside. These tender little dumplings hide a burst of juicy sweet-tart cherries inside a soft, pillowy dough, and the moment you bite through one you understand why Ukrainian families have made them for generations. This version uses a thoughtful blend of wheat and rye flour, which gives the dough a gentle, rustic flavor and a slightly sturdier texture that holds the cherry juice beautifully during boiling.

Varenyky are one of the cornerstones of Ukrainian home cooking, cousins to Polish pierogi and a beloved fixture at summer tables when cherry trees hang heavy with fruit. While savory fillings like potato and cheese are eaten year-round, the cherry version is a true seasonal celebration, a way to capture the fleeting sweetness of early summer. Families would gather to pit cherries and pinch dumplings together, and the dish carries that sense of warmth and togetherness to this day.

The secret to great varenyky lies in the dough and the seal. You want to knead until the dough turns smooth and elastic, then let it rest under a damp towel so it relaxes and becomes easy to roll thin. When you fill each round, press the edges firmly so the precious cherry juice stays locked inside rather than leaking into the pot. A light sprinkle of sugar over the cherries before sealing draws out their syrup and gives you that glorious sweet center.

Tips & Substitutions

  • Cherries: Fresh pitted sweet or sour cherries are ideal in season. Out of season, use thawed frozen cherries, but drain them well and pat dry so excess liquid does not tear the dough.
  • Flour blend: No rye on hand? Use all wheat flour for a softer dumpling, or swap in a few tablespoons of whole wheat for a similar nutty note.
  • Sealing trick: Brush a tiny bit of water along the edge before pinching if your dough feels dry, and press out any air pockets.
  • Catch the juice: Add a teaspoon of starch or semolina with the cherries to thicken the released juice and keep dumplings intact.
  • Lighter serving: Swap sour cream for Greek yogurt, or skip the chocolate sauce and dust with powdered sugar instead.

Serve your cherry dumplings hot, straight from the pot, topped with a generous spoonful of cool sour cream and a drizzle of chocolate sauce for an irresistible contrast of warm and cold, sweet and tangy. Leftovers keep in the refrigerator for up to two days; reheat gently in simmering water or a little butter. To freeze, arrange uncooked dumplings in a single layer until solid, then bag them and boil straight from frozen, adding a couple of extra minutes. Smachnoho, and enjoy this little taste of a Ukrainian summer!

Ingredients

  • 260 Grams
    wheat flour
  • 130 Grams
    rye flour
  • 3 Pieces
    eggs
  • 1/2 to 3/4 cup water
  • 400 Grams
    cherries, pitted
  • 1 Tablespoon
    sugar (optional)
  • 0.5 Teaspoons
    salt

Instructions

  1. Start by sifting both flours into a roomy bowl. Make a small well in the mound of flour, crack in the eggs, and add the water and salt, along with a little sugar if you like.

  2. Mix the dough together, turn it out onto a floured work surface, and knead it well by hand until it becomes smooth and elastic.

  3. Cover the dough with a damp towel so it does not dry out, and let it rest for about 40 minutes.

  4. Divide the rested dough into portions and roll each one out fairly thin into a round. Alternatively, roll all the dough into one thin sheet and cut out circles of the size you want using a glass or other cutter.

  5. Place three pitted cherries on each round. If you like, sprinkle the berries with a pinch of sugar.

  6. Pinch the edges tightly to form neat dumplings so they do not open during boiling and let the juice escape.

  7. Ahead of time, put a pot of water on the heat, remember to salt it, and bring it to a boil. Drop the dumplings into the boiling water and cook for 10 minutes after they float to the surface.

  8. Serve the finished dumplings hot with sour cream and chocolate sauce. Enjoy!
