This thick smoothie is rich enough to stand in for dessert, especially when you want something sweet but don’t feel like overeating before bed. The base is dried apricots, soaked beforehand in hot water, so they deliver concentrated apricot sweetness with no added sugar. Coconut milk and a scoop of vanilla ice cream make the drink creamy and tropically fragrant.

Always soak the dried apricots: when they’re dry they blend poorly and stay stringy, but hot water restores their softness and juiciness. Choose matte, darker apricots with no shine, brilliant orange ones are often treated with sulfur dioxide. If you don’t have flavored yogurt, use plain and add a little more honey. For a lighter version, swap the ice cream for a frozen banana, which still adds creaminess but with fewer calories.

Serve chilled in tall glasses, dusted with large coconut flakes. Because of its dense texture, this smoothie is best eaten with a spoon, like a drinkable dessert.


Ingredients

  • 75 Grams
    dried apricots
  • 125 Grams
    apricot- or peach-flavored yogurt
  • 170 Millilitres
    light coconut milk
  • 300 Millilitres
    milk
  • 1 Tablespoon
    runny honey
  • 1 Scoop
    vanilla ice cream
  • large coconut flakes, for garnish (optional)

Instructions

  1. Rinse the dried apricots and soak them in hot water for 15 minutes, then chop coarsely.

  2. Blend all the ingredients except the coconut flakes into a smooth, creamy mass.

  3. Pour into glasses, garnish with coconut flakes (if using), and serve.
