Strawberry Mint Lemonade
This is a cool summer drink where the classic lemon tang is rounded out by sweet strawberries and fresh mint. Instead of cooking a syrup, everything is simpler here: sliced citrus, berries, and herbs are simply steeped in sweetened water in the fridge, so the fruit slowly gives up its aroma while the drink stays fresh and uncooked.
Lemonade in its modern form, a drink based on lemon juice, water, and sugar, spread across Europe back in the 17th century and long ago became a must-have on a hot day. The version with strawberries and mint is a typical summer mix, when seasonal berries and herbs from the garden go straight into the pitcher. Cold steeping, rather than boiling, preserves the fresh, living flavor of the berries and the essential oils of the mint, which are lost to heat.
Worth knowing: Lightly bruise the mint leaves in your palm before adding them, so they release more aroma without turning bitter.
- Strawberries can be swapped for raspberries, blackberries, or peaches depending on the season.
- If you want a more intense color and flavor, mash some of the strawberries with a fork before steeping.
- The sugar is easily replaced with honey or agave syrup, but add them to the warm part of the water so they dissolve.
Serve well chilled over ice; for an adult version, add gin, rum, or prosecco. The finished lemonade is best enjoyed the same day, since the citrus peel can turn bitter by the second day.
