If you’re looking for a salad that feels both comforting and a little bit special, this smoked chicken salad is exactly the kind of dish you’ll want in your back pocket. It brings together tender, smoky chicken, creamy hard-boiled eggs, earthy mushrooms, sharp grated cheese, sweet bell pepper, and a little bite of fresh onion, all pulled together with a generous spoonful of mayonnaise. It’s hearty enough to anchor a meal, yet it always earns a place of honor on a holiday table.

Layered salads bound with mayonnaise are a beloved part of the Ukrainian and broader Eastern European home-cooking tradition. For generations, families have gathered around festive spreads where a colorful, well-composed salad signals celebration and abundance. Smoked chicken became a popular star of these salads because it delivers deep, savory flavor without much fuss, you simply chop it and fold it in. This version stays true to that homey spirit while keeping the ingredient list short and welcoming for any cook.

The secret to a great result here is in a few small touches. Boil your eggs gently, about 9 to 10 minutes, then shock them in cold water so the shells slip right off and the yolks stay golden rather than gray. Drain the canned mushrooms really well, even pressing them lightly, so no extra liquid waters down your dressing. And when you handle the smoked chicken, try tearing it into shreds by hand instead of only cubing it, the ragged edges hold the mayonnaise beautifully and taste even juicier.

Tips & Substitutions

  • Chicken: No smoked chicken on hand? Use smoked turkey, leftover roast chicken with a pinch of smoked paprika, or even good-quality rotisserie chicken.
  • Mushrooms: Canned button mushrooms are traditional, but sauteed fresh mushrooms (cooled completely) add a lovely depth.
  • Cheese: A firm cheese like Gouda or a mild cheddar grates well; for extra tang, try a sharp aged cheese.
  • Dressing: Lighten things up by swapping half the mayonnaise for plain Greek yogurt or sour cream.
  • Onion: If raw onion is too strong for you, soak the chopped onion in cold water for ten minutes, then drain, to mellow its bite.

For a festive presentation, arrange the chopped ingredients in neat sectors around a large flat platter, placing matching ingredients across from one another, and crown the center with mayonnaise dusted with onion, then toss it together just before serving. Otherwise, simply fold everything in a bowl until evenly combined. This salad is best enjoyed fresh but keeps well, covered, in the refrigerator for up to two days. Give it a gentle stir before serving again, and enjoy every savory, smoky bite.

Ingredients

  • 200 Grams
    smoked chicken meat
  • 5
    hard-boiled eggs
  • 150 Grams
    canned button mushrooms
  • 100 Grams
    grated cheese
  • 1
    bell pepper
  • 1
    onion
  • Mayonnaise, to taste

Instructions

  1. First, hard-boil the eggs: place them in cold water, bring to a boil, and cook for about 9 to 10 minutes, then transfer to cold water so they peel more easily. Let them cool and peel them.

  2. Chop the smoked chicken into small cubes or pull it into shreds by hand, this keeps it even juicier and more aromatic.

  3. Drain the canned mushrooms in a colander, let the excess liquid run off, and cut them into small pieces.

  4. Dice the cooled eggs. Wash the bell pepper, remove the core and seeds, and cut it into small cubes. Peel the onion and chop it as finely as possible.

  5. Grate the cheese on a fine grater if you haven't done so already.

  6. In a bowl, combine the chopped smoked chicken, mushrooms, eggs, bell pepper, and onion. Add the grated cheese.

  7. Dress the salad with mayonnaise to taste and gently mix so all the ingredients come together evenly.

  8. For a festive presentation: arrange all the ingredients on a large flat plate in sectors around a circle, placing matching ingredients across from one another. This makes 10 sectors, with mayonnaise in the center dusted with onion. You can toss this version together just before serving.
