Ingredients

  • 200 Grams
    heavy cream (at least 33% fat)
  • 200 Grams
    raspberries
  • 3 Tablespoons
    rolled oats (heaping spoonfuls)
  • 2 Tablespoons
    powdered sugar
  • 1 Tablespoon
    whisky or cognac (1-2 spoonfuls)
  • Grated dark chocolate for dusting (optional)

Instructions

  1. In a dry skillet, toast the rolled oats until they turn a nice golden brown and smell nutty. Toast them over low heat, stirring constantly so they do not burn. This is the most important step, since the entire aroma of the dessert depends on it.

  2. Blend the raspberries with 1 tablespoon of powdered sugar until you have a smooth puree.

  3. Pour the chilled cream into a cold bowl and whip with a mixer until light and fluffy.

  4. Add 1 heaping tablespoon of powdered sugar to the cream and mix thoroughly. Whip on the lowest speed and watch carefully so you do not overbeat the cream, or it will turn into butter.

  5. Add the toasted oats and the cognac (or whisky) to the whipped cream and gently fold together with a spoon.
