Royal Mojito with Champagne
A celebratory version of the mojito in which a splash of champagne joins the white rum. The bubbles of the sparkling wine lift the aroma of the mint, while the tartness of lime keeps the drink from turning sugary — the result is an elegant cocktail with a romantic streak, as if made for lovers.
The Royal Mojito is a bridge between Cuban street classics and European bar culture: rum stays the foundation, but champagne transforms a simple refresher into an aperitif for a special occasion. Blackberries add a dark, fruity accent and a refined look.
Tips and Substitutions
Pour the champagne in at the end and barely stir, to preserve the play of the bubbles. Use a dry or brut sparkling wine — a sweet one will make the cocktail cloying when combined with the syrup. Raspberries or blueberries work in place of blackberries for the garnish. For a lighter version, you can leave out some of the rum and increase the proportion of champagne.
Serve immediately in a tall glass while the sparkling wine is still lively. It’s the perfect cocktail for summer celebrations and parties.
