There’s something deeply comforting about a whole chicken roasting in the oven, filling your kitchen with the smell of warm citrus, honey, and garlic. This roast chicken stuffed with apples and tangerines is one of those dishes that feels like a celebration before you even sit down to eat it. The bird turns golden and glossy thanks to a honey-soy glaze, while the fruit tucked inside steams the meat from within, keeping every bite tender and juicy. When you carve into it, you get a gentle sweetness from the apples and a bright, fragrant lift from the tangerines that makes this so much more than your everyday roast.

Roasting a whole bird with fruit is a tradition that runs deep across Eastern European and Ukrainian holiday tables. In many homes, the centerpiece of a festive dinner was a stuffed roast chicken or goose, and cooks would reach for whatever the season offered, often apples in the fall and citrus around the winter holidays. The combination of sweet fruit and savory poultry isn’t just about flavor; the moisture from the apples and tangerines was a clever, time-tested way to keep lean farm-raised birds from drying out during a long, slow roast. This recipe carries that same homey wisdom into your kitchen today.

The real secret here is patience and a good marinade. Rubbing the bird with salt inside and out, then coating it in a paste of soy sauce, garlic, and poultry spices, gives the meat time to drink up all that flavor. Letting it rest in the fridge for a couple of hours genuinely makes a difference, so don’t skip it if you can help it. Cooking the chicken in a roasting bag (or sleeve) traps steam and keeps things moist, and the honey brush right before it goes in is what gives you that irresistible burnished skin.

Tips & Substitutions

  • No roasting bag? Roast the chicken uncovered in a deep pan, tent it loosely with foil for the first hour, then uncover it for the last 20 minutes to crisp the skin.
  • Swap the citrus: Clementines, mandarin oranges, or even thick orange wedges work beautifully in place of tangerines. Leave the peel on, as it perfumes the meat as it cooks.
  • Pick the right apples: Use a firm sweet-tart variety like Honeycrisp, Gala, or Granny Smith so they hold their shape instead of turning to mush.
  • Make it gluten-free: Use tamari or a certified gluten-free soy sauce in the marinade.
  • Honey alternatives: Maple syrup or a spoonful of brown sugar dissolved in warm water gives the same glossy, caramelized skin.
  • Add aromatics: Tuck a sprig of rosemary or thyme into the cavity along with the fruit for an extra layer of fragrance.

When the chicken is done, resist the urge to slice it right away. Let it rest for about 10 minutes so the juices redistribute, then lift it from the bag and bring it to the table whole for a real showstopper moment. Serve it with roasted potatoes, a simple green salad, or buttered grains to soak up those sweet pan juices. Any leftovers keep well in an airtight container in the fridge for up to three days, and the meat is wonderful shredded into sandwiches or grain bowls the next day. Enjoy every bite, and happy cooking!

Ingredients

  • 1 Piece
whole chicken, about 2.5 kg (5.5 lb)
  • 2 Pieces
    sweet-tart apples
  • 2 Pieces
    large tangerines
  • 1 Tablespoon
    liquid honey
  • 3 Tablespoons
    soy sauce
  • 3 Pieces
    garlic cloves
  • 1 Tablespoon
    poultry seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Rinse the chicken well under running water and pat it dry. Rub the bird with salt inside and out so the meat seasons evenly.

  2. In a separate bowl, combine the poultry seasoning, pepper, soy sauce, and the garlic pressed through a garlic press. Coat the entire bird thoroughly with this fragrant mixture.

  3. Leave the chicken to marinate in the refrigerator for 2 hours so it can soak up the flavor of the spices and soy sauce.

  4. Wash the apples, cut them into several pieces, and remove the cores. Wash the tangerines as well and cut them, peel and all, into quarters.

  5. Stuff the chicken with the prepared fruit and secure the opening with toothpicks so the filling doesn't fall out while roasting.

  6. Brush the top of the chicken with liquid honey for an appetizing golden crust, then place the bird in a roasting bag.

  7. Preheat the oven to 180 degrees Celsius (350 F). Set the chicken on a baking tray in the oven and roast for 1 hour and 20 minutes.

  8. Let the chicken rest for a little while, remove it from the bag, and serve hot. Enjoy your meal!
