Rice Salad for Winter
Rice salad for winter is a hearty preserve where raw rice cooks right alongside tomatoes, carrots, onion, and pepper, soaking up their juices. What you get is an almost-finished meal: in winter you reheat a jar and serve it as a light lunch or side, with no separate pot of grain to cook. Unlike a “northern pilaf,” where the vegetables go in one at a time, here everything cooks together for forty minutes.
Proportions are the key. There’s twice as much tomato as carrot and onion for a reason — that juice has to cook the rice without letting the mass scorch. The rice goes in raw and swells to doneness in the tomato as it simmers, staying whole rather than breaking down.
A couple of cautions. Stir now and then, especially near the end, since the thick rice mixture catches on the bottom easily. The vinegar essence is a concentrated acetic acid added at the very end as a preservative, so measure that teaspoon precisely rather than eyeballing it. Ladle the salad hot into sterilized jars and always wrap them until fully cool — the slow cooldown finishes the rice and adds a round of gentle pasteurization.

Cut the vegetables, add the raw rice, 0.5 liter of vegetable oil, 4 tablespoons of salt, and 5 tablespoons of sugar.
Cook over low heat for 40 minutes.
At the end of cooking, add 1 teaspoon of vinegar essence.
Ladle into jars, seal, and wrap.
