Light and elegant Raspberry pie

Refinement, lightness, and elegance. All this comes from a marvellous  Raspberry pie. If you like pastries with fresh fruits and berries, this Strawberry pie is a perfect choice for you. The recipe is not difficult. I think every good hostess has to have it in her culinary book.

    Baking powder
  • 125 Grams
  • 100 Liters
  • 5 Tablespoons
    Milk (for dough)
  • 4 Tablespoons
    Vegetable oil
  • 125 Grams
    Low fat quark
  • 325 Grams
    Fresh (or frozen) raspberry
  • 1 Tablespoon
  • 175 Grams
    Crème fraîche
  • 3
  • Sugar powder
  • Salt


  1. Take a lemon and add fresh boiling water. Then wipe it dry. Grate fine a lemon rind. Mix flour, baking powder, 50 grams of sugar, a pinch of salt and the lemon rind in a bowl.

  2. Then add 5 tablespoons of milk, vegetable oil and curd into it. Mix it with mixer until smooth dough.

  3. Sprinkle a cooking surface with the flour, put the dough on it and roll out a circle of, the diameter of which is 28 cm. Coat a round baking pan with vegetable oil and sprinkle with flour. Put the dough into the pan, bending the edges, and form a shape of 2 cm high.

  4. Mix raspberry with baking powder and put it into the pan.

  5. Mix crème fraîche, rest of the sugar, eggs and milk. Pour it into the pan, on the top of the berries.

  6. Heat an oven to 180 degrees. Put the baking pan into the oven on the second shelf and bake for 25-30 minutes. Then take the ready pie out from the oven and sprinkle it with sugar powder.
