Quick Berry Crumble
The crumble is an English dessert born of wartime thrift, when pastry was replaced with a simple topping of flour, sugar, and butter to stretch scarce supplies. This shortcut version goes a step further: instead of mixing a shortbread crumble from scratch, you use two kinds of ready-made cookies plus muesli, so the dessert comes together in about twenty minutes.
Contrast is the star here: beneath the crisp, lightly caramelized top hides a hot berry filling that releases its juices. Cardamom adds a warm, spiced note that pairs especially well with cherries and currants.
Good to know: Frozen berries can go in without thawing, but add 5 minutes to the baking time.
- If the berries are very tart (currants, cherries), stir an extra spoonful of sugar into the filling.
- Cardamom can be swapped for cinnamon or vanilla; no caramel-flavored cookies on hand? use any shortbread.
- Don’t pack the crumble down too firmly, or it won’t turn crisp.
Serve warm, always with a scoop of vanilla ice cream or a spoonful of heavy cream; the cold against the hot gives the very effect a crumble is eaten for. Leftovers can be reheated in the oven to bring back the crunch.

Mix the berries with the sugar and divide among small ovenproof ramekins.
Preheat the oven to 210-220°C/410-425°F. Crush the cookies into a coarse crumble, then add the muesli, flour, cardamom, and melted butter. Mix everything well and spoon it into the ramekins over the berries. Bake for 15-17 minutes.
Take the finished crumbles out of the oven, let them cool for just a couple of minutes, and serve with a scoop of ice cream.
