There’s something deeply comforting about a humble potato gratin baked until golden and bubbling, and this version is about as cozy as it gets. You start with the simplest pantry staples – potatoes, milk, and eggs – and finish with the warm, almost festive aroma of freshly grated nutmeg. It’s the kind of dish you can throw together on a busy weeknight, yet it tastes special enough to set on the table for guests. Tender layers of thinly sliced potato soak up a silky egg-and-milk custard, and the top crisps up into that irresistible burnished crust everyone fights over.

Baked potato dishes like this one have long been beloved across Ukrainian and broader Eastern European home kitchens, where potatoes have been a staple for generations. The idea is wonderfully thrifty: take inexpensive, filling ingredients and coax real flavor out of them with patience and a hot oven. Nutmeg, once a prized and expensive spice, became the secret touch that turned an everyday potato bake into something that felt like a small celebration. Cooks would grate just a whisper of it over the potatoes, and that gentle warmth is exactly what makes this gratin sing.

The single most important tip is to slice your potatoes as thinly and evenly as you can. Thin slices cook through gently and meld into a creamy, uniform texture rather than staying firm in the middle. A mandoline makes quick work of this, but a steady hand and a sharp knife will do just fine. Be generous when you butter the baking dish – this keeps the bottom from sticking and makes serving a breeze. And don’t be shy with the nutmeg; freshly grated is worlds better than the pre-ground kind, releasing that cozy, slightly sweet fragrance that defines this dish.

Tips & Substitutions

  • Potatoes: Starchy or all-purpose potatoes work best for a tender, cohesive bake. Waxy potatoes hold their shape more, which is fine if you prefer distinct layers.
  • Richer custard: Swap part of the milk for cream or half-and-half for a more decadent, restaurant-style gratin.
  • Cheesy version: Scatter grated Gruyere or sharp cheddar between the layers and over the top for a golden, melty crust.
  • Spice it up: A pinch of garlic powder, thyme, or a bay leaf warmed in the milk adds another layer of flavor.
  • Dairy-free: Use a neutral plant milk and a little olive oil to grease the dish; the nutmeg still carries plenty of warmth.

Let the gratin rest for a few minutes after it comes out of the oven so the custard sets and slices cleanly into neat portions. Serve it warm as a hearty main alongside a crisp green salad, or as a generous side dish with roast chicken or sausages. Leftovers keep beautifully in the fridge for up to three days – simply cover and reheat in a warm oven or the microwave until heated through. It’s just as good the next day, making it a perfect make-ahead comfort food. Enjoy every cozy bite!

Ingredients

  • 1.5 Kilogram
    potatoes
  • 750 Millilitres
    milk
  • 4 Pieces
    eggs
  • Butter, for greasing the dish
  • Nutmeg, freshly grated, to taste
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Peel and wash the potatoes, then slice them into thin, even rounds. The thinner you cut them, the more tender and uniform your gratin will turn out.

  2. Generously grease a baking dish with butter so nothing sticks and the dish is easy to serve later. Arrange the prepared potatoes in an even layer.

  3. Sprinkle the potatoes with freshly grated nutmeg, season with black pepper, and salt to taste. Don't skimp on the nutmeg - it's what gives this dish its warm, festive aroma.

  4. In a separate bowl, whisk the eggs together with the milk until smooth, so the mixture becomes light and slightly frothy.

  5. Pour the egg-and-milk mixture over the potatoes so it evenly covers all the slices.

  6. Place the dish in an oven preheated to 180°C (350°F) for 30 minutes, until the top is golden and the custard has set.

  7. Let the finished gratin cool slightly, divide into 4 portions, and serve warm. Enjoy!
