Cut the cabbage into rough 1¼-by-1½-inch squares and resist the urge to shred it — the thickness of each piece is what makes this work. Boiling brine heats the outside of a chunk but never gets far enough in to soften the core, so twenty hours later the cabbage is still springy and audibly crisp. Shredded cabbage would simply go limp in the same time.

The sourness comes from vinegar in a hot brine rather than from lactic fermentation, which means nothing here depends on the temperature of your kitchen — the real advantage over a two-week crock ferment. The oil isn’t a mistake: it floats as a thin film and slows the cabbage’s contact with air. Keep the weight on top light; it only needs to hold the vegetables under the liquid, not press them flat. The recipe assumes 6% vinegar, stronger than the 5% distilled white sold in most American supermarkets, so with standard US vinegar use the full 150 g (about ⅔ cup) and expect a slightly gentler bite. Three kilos of cabbage is roughly 6½ pounds — a head and a half, and it packs down more than you’d think. Sliced garlic rather than pressed releases its aroma slowly, and a few pieces of beet in the jar turn the whole batch pink.
