No-Bake Orange Jelly Cake (Sokovytyi Apelsyn)
If you are looking for a dessert that feels festive yet asks almost nothing of you, this no-bake orange jelly cake is exactly the recipe you want in your back pocket. There is no oven, no fussy frosting, and no chance of a dry crumb. Instead, you get a bright, glistening crown of fresh orange slices set in glossy jelly, sitting atop a creamy, lightly sweet sour-cream layer studded with crushed cookies. When you flip it out onto a plate, it looks like something from a bakery window, but you and I both know it came together in about half an hour of hands-on work.
Desserts like this one are a beloved part of the Ukrainian home-baking tradition, where cooks have long leaned on smetana (rich, tangy sour cream) and gelatin to create airy, refrigerator-set “cakes” that need no flour or baking time. They became especially popular in households where a hot oven was a luxury in summer, or when a quick yet impressive treat was needed for a name-day or holiday table. The pairing of creamy smetana with vivid fruit jelly is a classic Eastern European combination, and the citrus version here gives the old idea a sunny, modern twist.
The secret to a flawless texture is patience with the gelatin. Let it bloom and dissolve fully so the cream sets silky-smooth, never grainy. Use full-fat 25% sour cream for the richest body, and make sure each layer is properly chilled before you add the next, so they stay beautifully distinct when sliced.
Tips & Substitutions
- Cookies: Plain shortbread, tea biscuits, or graham crackers all work; crush them coarsely for a little texture or finely for a smoother crumb.
- Sour cream: If you cannot find 25% smetana, use a mix of full-fat sour cream and a little heavy cream, or swap in thick Greek yogurt for a tangier, lighter result.
- Jelly: Any citrus or berry gelatin works in place of orange; lemon or tangerine is especially lovely.
- Fruit: Trade orange slices for mandarin segments, peeled grapefruit, or a mix of berries for the top layer.
- Sweetness: Reduce the sugar to taste if your cookies are already sweet, or add a splash of orange liqueur to the cream for a grown-up version.
Once your cake has set overnight, dip the mold briefly in hot water and invert it onto a flat platter so the jewel-bright orange layer becomes the top. Serve it well chilled, cut into neat wedges with a warm knife. Leftovers keep beautifully, covered, in the refrigerator for up to three days, and the flavor only deepens. It is the kind of effortless, crowd-pleasing dessert you will find yourself making again and again. Enjoy!

Instructions
Pour boiling water over the gelatin, stir well, and set it aside for a while until it dissolves completely. Do not rush it. Let it bloom and swell gently, and your cream will turn out smooth, without a single lump.
Meanwhile, wash and peel the oranges, slice them into rounds or segments, and arrange them over the bottom of a deep mold. This will become the pretty crown of your cake once you turn it out.
Prepare the orange jelly according to the instructions on the packet and carefully pour it over the oranges in the mold. Place the mold in the refrigerator and leave until fully set.
Now turn to the cookies: crush them by hand or with a rolling pin into fine crumbs and set aside.
In a bowl, combine the sour cream, sugar, and vanillin, and beat everything well with a mixer until the mixture is smooth and slightly fluffy.
Pour the cooled, dissolved gelatin into the sour cream mixture and beat again so it spreads evenly throughout the cream.
Add the crushed cookies to the sour cream and gelatin mixture and stir thoroughly.
Pour this mixture over the already-set layer of orange jelly, smooth the top, and refrigerate the cake for several hours, or better yet overnight, so it sets completely.
Before serving, gently lower the mold into hot water for a few seconds, then invert the cake onto a flat plate or tray. The Juicy Orange is ready for the table. Enjoy!
