“Marvelous” Salad
“Marvelous” salad is the sort of preserve where rice quietly turns an ordinary vegetable mix into an almost complete meal. Pureed tomatoes, carrot, onion, and sweet pepper cook down until thick while the rice drinks up the juices, so come winter a jar becomes a side dish or a stuffing for cabbage rolls.
The recipe calls for a “glass” of each measured item — in Ukrainian home cooking that’s the standard 250 ml cup (about 8 fl oz), so read every “glass” as one cup.
The full two hours of stewing earns its keep: the first hour drives off the tomatoes’ water and concentrates flavor, the second lets the rice finish and bind everything. Cook the rice ahead until just done, never to mush, or the jar turns pasty. Stir often in the back half of cooking, because the thickened rice loves to scorch on the bottom. The vinegar goes in only at the very end as the preservative — don’t leave it out if you plan to store the jars at room temperature.

Put the tomatoes through a meat grinder, cut the onion into rings, grate the carrot coarsely, and cut the pepper into strips.
Combine all the vegetables and cook for 1 hour.
Add the cooked rice, sugar, salt, oil, bay leaves, and vinegar and cook 1 more hour.
Ladle into sterile jars and seal.
