If you are looking for a cozy, fuss-free dessert that fills the kitchen with the smell of warm orange zest and sweet baked apples, this Lenten carrot and apple cake is exactly what you need. Made entirely without eggs or butter, it comes out soft, moist, and tender with a lovely golden crumb. The best part? You let your slow cooker do all the work, so there is no fiddling with the oven or worrying about hot spots. It is the kind of simple, honest cake you can throw together on a quiet afternoon and have ready in time for tea.

Lenten baking has deep roots in Ukrainian home cooking. During the long fasting periods of the Orthodox calendar, families traditionally set aside eggs, dairy, and butter, yet they never gave up on the comfort of something sweet. Cooks learned to coax richness out of humble pantry staples, leaning on grated vegetables and fruit for natural moisture and sweetness. Carrots and apples were always close at hand in the root cellar, and together they create a cake that feels indulgent while staying entirely plant-based. This slow-cooker version is a modern, everyday take on that thrifty, resourceful tradition.

The secret to a great crumb here is in how you prepare the produce. Grate the carrots finely so they melt into the batter and lend their color and sweetness, and grate the apples a little coarser so you still get tender little pockets of fruit throughout. Be sure not to overmix once the flour goes in; you want to fold everything together just until combined so the cake stays light and airy. A generous pinch of vanilla and a spoonful of citrus zest are what take this from plain to genuinely fragrant, so do not skip them if you can help it.

Tips & Substitutions

  • Add some crunch or chew: Fold in a handful of chopped walnuts, raisins, or other dried fruit for extra texture and flavor.
  • No slow cooker? Bake the cake in a regular oven at 350°F (180°C) for 25 to 30 minutes, checking doneness with a wooden toothpick.
  • Adjust the sweetness: The sugar is flexible; use anywhere from 120 to 150 grams depending on how sweet your apples are and how sweet you like it.
  • Citrus your way: Either orange or lemon zest works beautifully, so use whichever you have on hand.
  • Oil swap: Any neutral vegetable oil works, but a light olive oil adds a subtle depth if you prefer.

Once the cooking program finishes, lift the cake out gently using the steamer basket so it keeps its shape, then let it cool completely before slicing. Cooling is important; warm cake can be fragile, but once it sets it firms up into clean, tender slices. Store any leftovers in an airtight container at room temperature for up to two days, or in the refrigerator for up to four. It pairs wonderfully with a cup of tea or coffee, and a light dusting of powdered sugar on top makes it feel a little extra special. Enjoy every cozy bite!

Ingredients

  • 2 Pieces
    carrots (1-2)
  • 2 Pieces
    apples
  • 130 Grams
    sugar (120-150 g)
  • 3 Tablespoons
    vegetable oil
  • 1.5 Cup
    flour
  • 2 Teaspoons
    baking powder (1.5-2 tsp)
  • 1 Piece
    orange or lemon zest
  • vanillin
  • Salt, to taste

Instructions

  1. Wash and peel the carrots and apples. Grate the carrots finely and the apples on a medium grater.

  2. Mix the grated apples with the grated carrots, add the sugar and oil, and stir until you have a smooth, uniform mixture.

  3. In a separate bowl, combine the flour, baking powder, salt, and vanillin.

  4. Combine both mixtures and stir well. If you like, add citrus zest for aroma, and you can also toss in walnuts, raisins, or other dried fruit.

  5. Grease the slow cooker bowl with oil, spoon in the batter, and set the "Baking" program for 65 minutes. The cooker will beep when it is done.

  6. Remove the finished cake from the bowl using the steamer basket.

  7. If you prefer, you can bake the cake in the oven instead, 25 to 30 minutes at 350°F (180°C); check doneness with a wooden toothpick.

  8. Let the cake cool, then serve. Enjoy!
