Homestyle Caesar Salad with Bacon and Rye Croutons
If you love a hearty salad that eats like a meal, this homestyle Caesar salad is going to become a regular on your table. Instead of delicate romaine, you start with crisp, refreshing Napa cabbage, then pile on smoky pan-fried bacon, golden rye croutons toasted in the bacon drippings, and a generous shower of grated cheese. A quick dressing of mayonnaise, oil, and fresh lemon juice pulls it all together. It’s crunchy, savory, and deeply satisfying, and you can have it on the table in about half an hour.
The Caesar salad was famously invented in the 1920s by restaurateur Caesar Cardini in Tijuana, Mexico, and it quickly spread north and across the ocean. As it traveled into Eastern European home kitchens, cooks made it their own with whatever was hearty and on hand. This Ukrainian-style version is a perfect example: rich rye bread for the croutons, smoky bacon with a little fat for flavor, and a creamy mayo-based dressing that’s a bit more forgiving than the classic raw-egg-and-anchovy original. The result is a comforting, no-fuss salad that honors the spirit of the original while feeling completely at home on a family table.
A few small touches make a big difference here. Toast your bread cubes in the rendered bacon fat rather than fresh oil, and you’ll get croutons that taste like the best part of breakfast. Cut the Napa cabbage into nice large pieces so it stays crisp and doesn’t wilt the moment the dressing hits it. And when it comes to the cheese, reach for something firm and flavorful so it clings to every leaf.
Tips & Substitutions
- Cheese: A hard cheese like Parmesan is the most authentic-tasting choice, but a good aged cheddar or Gruyere works beautifully too.
- Bacon: Use a thick-cut smoked bacon for the best texture. Pancetta or smoked turkey bacon make fine swaps.
- Bread: Day-old rye is ideal because it crisps up perfectly, but a sturdy sourdough or country loaf will also do the trick.
- Lighter dressing: Swap half the mayonnaise for plain Greek yogurt to lighten things up without losing the creamy tang.
- Add anchovy: For a flavor closer to the classic Caesar, mash one anchovy fillet into the dressing.
Serve this salad right away, while the croutons are still crunchy and the bacon is warm. Once dressed, it doesn’t keep well, so toss it just before everyone sits down. If you want to prep ahead, fry the bacon, make the croutons, and whisk the dressing in advance, then store each component separately and combine at the last minute. Any leftovers are best eaten the same day, kept covered in the fridge for no more than a few hours.

Cut the bread into roughly 1x1x1 cm cubes and fry them in the fat left from the bacon until golden and crisp. Add the finished croutons to the large bowl.
Gently toss everything in the bowl so the cabbage, bacon, and croutons are evenly combined.
Whisk together the oil, mayonnaise, and the juice of half a lemon until smooth, then drizzle this dressing over the salad.
