There’s something deeply comforting about a glass of hohol-mohol, the silky whipped egg-yolk drink that so many of us remember from childhood. Made from just a yolk, a little sugar, a pinch of salt, and cool milk, it comes together in minutes and rewards you with a pale, frothy, faintly sweet treat that feels like a hug in a glass. If you’re after a quick dessert-drink that doesn’t require an oven, a long ingredient list, or any special skill, you’re in exactly the right place.

The name itself is playful and a little mysterious. In Ukrainian and other Eastern European kitchens, hohol-mohol (often spelled gogol-mogol) has been a beloved home remedy and bedtime treat for generations. Grandmothers spun beaten yolks with sugar to soothe a scratchy throat or to coax a reluctant child into eating something nourishing. Cousins of this drink appear all across the region and beyond, and it shares a clear family resemblance with American eggnog, though this version is lighter, milkier, and not spiked. It’s the kind of recipe that gets passed down by feel rather than by measurement, which is part of its charm.

The real secret to a luxurious texture is patience while you whisk. You want to beat that yolk with the sugar until the mixture turns noticeably paler, grows in volume, and the sugar grains have completely dissolved. This can take a few minutes of steady whisking, but don’t rush it, because that air is what gives the drink its lovely lightness. Just as important: your milk must be cool, never hot. Pouring warm milk over a raw yolk will scramble it instantly and ruin the smooth finish, so boil your milk ahead of time and let it chill fully before you begin.

Tips & Substitutions

  • Sweetness: Swap the granulated sugar for honey, maple syrup, or powdered sugar if you prefer a softer sweetness or a faster dissolve.
  • Dairy-free: Use cold oat milk or almond milk in place of dairy for a lighter, plant-based version.
  • Flavor boost: A drop of vanilla extract, a whisper of cinnamon, or a little grated nutmeg turns this into a cozy spiced treat.
  • Food-safety note: Because the yolk is raw, use the freshest, highest-quality egg you can find, and consider a pasteurized egg if you’re serving children, elderly guests, or anyone with a weakened immune system.
  • Richer version: Replace part of the milk with cream for a more decadent, custard-like sip.

Serve your hohol-mohol well chilled, poured into a pretty glass with a thin slice of lemon perched on the rim for a fresh, bright finish. It’s best enjoyed right away while it’s still frothy, but if you need to hold it briefly, keep it covered in the refrigerator and give it a gentle stir before serving. Simple, nostalgic, and ready in minutes, this little drink proves that some of the most memorable treats are also the easiest to make. Enjoy!

Ingredients

  • 1 Piece
    chicken egg yolk
  • 2 Tablespoons
    sugar
  • 3/4 cup cold milk
  • 1 Pinch
    salt
  • slice of lemon, for serving

Instructions

  1. First, carefully separate the yolk from the white. Do this over a separate bowl so that not a single drop of white gets into the yolk, otherwise the mixture will whip up poorly. You won't need the white this time, so tuck it away in the refrigerator for another dish.

  2. Place the yolk in a deep, clean bowl and begin whisking. Add the sugar and a pinch of salt, then whisk very well until the mixture turns pale, increases in volume, and becomes fluffy and uniform, and the sugar grains have completely dissolved.

  3. Boil the milk ahead of time, then be sure to cool it down — it should be cool, not hot, so the yolk doesn't curdle. Pour the cooled milk into the whipped yolk in a thin stream while stirring constantly so the mixture stays smooth.

  4. Stir everything once more gently until uniform. Serve the hohol-mohol chilled and, if you like, garnish with a slice of lemon on the rim of the glass. Enjoy!
