Good Health to You Salad
This crunchy winter salad has a name that roughly means “good health to you” — a purely Ukrainian pairing of sauerkraut, sweet carrot, and grated apple. The sweet-and-sour contrast drives it: sauerkraut brings tartness and probiotics, apple softens the edge with fresh sweetness, and the dressing of smetana (full-fat sour cream; Greek yogurt is the easiest substitute) with walnuts turns a pantry staple into a real starter.
For a salad that’s juicy rather than sodden, wring very sour kraut out of its brine a little before you mix. Add the breadcrumbs only at the very end, right before serving, or they’ll go soft and pointless — toast about a heaping tablespoon of white crumbs until golden and crush them fine, because that top crunch is what separates this from an ordinary cabbage slaw.
Swap the walnuts for hazelnuts or pumpkin seeds if you prefer. And taste before adding sugar: with very sour kraut a teaspoon brings it into balance, but a mild batch may not need any at all.
