A quick homemade dessert you can throw together from whatever ripens at summer’s end. Watermelon, apple, plum, and grape each bring their own texture — from juicy-crisp to firm — so every spoonful is a little different. In place of heavy creams there’s lightly whipped smetana (full-fat cultured sour cream; substitute crème fraîche or full-fat sour cream), sweetened just enough with powdered sugar.

The nicest part is that it isn’t a make-ahead dish. Served in individual dessert coupes it looks elegant and gives everyone their own cap of cream over the fruit.

Worth keeping in mind. Use sour cream with at least 20% fat, or it won’t whip and will simply run. Fold in the powdered sugar gradually and taste — an over-sweet topping buries the fruit. Seedless grapes are easier to eat; halve large ones. Assemble it just before serving so the fruit doesn’t weep.
