There’s something deeply satisfying about pulling this golden, bubbling casserole out of the oven, the cheese stretched into a crisp, ruddy crust over layers of tender potato, juicy chicken, and sweet tomato. If you’re looking for a one-dish dinner that feels a little festive but asks almost nothing of you, French-style baked potatoes deliver every single time. You slice, you layer, you bake, and the oven does the rest while your kitchen fills with the smell of melting cheese and roasting tomatoes.

Despite the name, this dish isn’t really French at all. “Meat po-frantsuzky” (literally “meat the French way”) is a beloved staple across Ukraine, Russia, and much of the post-Soviet world, said to be loosely inspired by a 19th-century gratin served to a Russian count by his French chef. Over the decades home cooks reinvented it with whatever was on hand, and the potato-and-chicken version you see here became a favorite for holidays, birthdays, and Sunday family tables. It’s comfort food with a dressy edge, the kind of thing that disappears fast no matter how much you make.

The secret to getting it right is in the layering. You want the potatoes sliced thin and even so they cook through, and you’ll notice the recipe starts the bake hot at 400°F to set that cheesy top, then drops to 300°F so the potatoes finish gently without the crust burning. Pre-cooking the chicken keeps it moist and guarantees everything is done at the same time. A light hand with the mayonnaise binds the chicken and adds richness, but you don’t want to drown it.

Tips & Substitutions

  • Swap the protein: ground pork, turkey, or even thin slices of raw chicken work in place of the boiled filet, though raw meat will add 10 to 15 minutes of baking time.
  • Mayo alternative: use sour cream or a 50/50 mix of sour cream and mayo for a lighter, tangier result.
  • Cheese: any good melting cheese works; mozzarella gives gooey pull, while cheddar or Gouda adds more flavor.
  • Make it richer: add a layer of thinly sliced onion between the potatoes and chicken for extra sweetness.
  • Prevent sogginess: pat the tomato slices dry with a paper towel before laying them down so they don’t release too much liquid.

Serve this hot and fresh from the oven, scattered with a few olives or a handful of chopped dill or parsley for color. It pairs beautifully with a crisp green salad or a bowl of pickled vegetables to cut the richness. Leftovers keep well in the fridge for up to three days and reheat nicely in a 350°F oven or even a skillet, where the bottom layer crisps up all over again. Enjoy, and as we say in Ukraine, smachnoho – good appetite!

    potatoes
  • 400 Grams

  • 350 Grams
    hard cheese
  • 3 Pieces
    tomatoes
  • 1 Tablespoon
    vegetable oil
  • Mayonnaise, to taste
  • Ground black pepper, to taste
