“Festive” Salad with Turkey Ham and Mushrooms
The “Festive” salad is a quick member of the mayonnaise-salad family that shows up on celebration tables. Unlike the layered kind, it’s simply stirred together. The base is turkey ham and canned champignons (button mushrooms), while sweet corn and sautéed carrot add color and a gentle sweetness. The whole thing hinges on the contrast between the fried mushrooms and onion and the mild turkey, which is leaner than pork.
Temperature is the rule that matters most here. Cool the mushrooms and the sautéed onion-carrot mix thoroughly before combining, or the mayonnaise will “run” and leave you with a watery salad. Drain the corn and mushrooms in a colander first so the liquid from the cans doesn’t thin the dressing.
Boiled chicken breast stands in nicely for the turkey ham, and you can swap part of the mayonnaise for smetana (full-fat sour cream) for a lighter result. Let it rest in the fridge for 30 to 40 minutes so the flavors settle together before serving.
