Do-It-Yourself Fruit Salad
This is less a recipe than a game for a crowd of kids; the salad is literally called “Do It Yourself.” Jobs are handed out by age: the older ones are trusted to cut the apples and pears, the younger ones to peel the orange, mandarin, and banana, and the littlest to pull grapes off the bunch. The dessert ends up made by the children’s own hands.
The base is flexible; use whatever fruit is around and gets along, since kiwi, strawberries, or canned peaches all suit citrus and grapes. One thing to watch: banana and apple brown fast, so cut them last or sprinkle with a drop of lemon juice. Add the yogurt dressing right before serving so the fruit doesn’t weep too much juice.
Instead of plain yogurt, reach for Greek yogurt, which is thicker and won’t run, or whipped cream for a festive version. The pine nuts and walnuts add crunch, but chop them fine for the youngest eaters. Serve in clear glasses so the layers of bright fruit show through.
