In Ukrainian kitchens, blyny have always been a beloved everyday treat, served for breakfast, as an afternoon snack with tea, or as a light supper. The technique of “brewing” the batter with hot water is an old home-cook secret passed down through generations. It was a practical solution in times when eggs were scarce: the boiling water helps the batter set and hold together, so you get flexible, reliable crepes even with a modest amount of egg. The most important thing to get right is the batter consistency. You want it pourable but not watery, roughly like heavy cream, so it spreads into a thin even layer when you tilt the pan. They are also wonderful with sour cream and jam, fresh berries, honey, or rolled around a savory filling of cheese or sauteed mushrooms. Instructions

  3. Pour a cup of rapidly boiling water into the batter and immediately stir vigorously. The boiling water scalds the batter and makes the crepes tender and lacy.

  4. Finally, pour in the oil and mix everything thoroughly once more. Let the batter rest for a few minutes.

  5. Heat your pan well. To speed things up, use several pans at once. Pour in a thin layer of batter, spreading it across the bottom.

  6. Fry the crepes on both sides until golden. Stack the finished crepes on a plate.

  7. Serve the custard crepes warm, drizzled with sweetened condensed milk.
