    sour cream
  • 120 Grams
    butter
  • 2 Cups
    all-purpose flour

    tvorog (farmer's cheese / pressed cottage cheese)
  • 2 Cups
    pitted cherries
  • 0.5 Cups
    walnuts
  • Pinches
    salt

Instructions

  1. Beat the egg yolks with one third of the sugar until pale and smooth. Add the melted butter, sour cream, and salt, and mix everything together well.

  2. Pour in the flour and knead a soft dough. Cover it and place it in the refrigerator so the butter firms up and the dough becomes easy to handle.

  3. Meanwhile, prepare the filling: in a small bowl, whisk the tvorog with half of the sugar until smooth, then chill it in the refrigerator as well.

  4. In a medium bowl, beat the egg whites on medium speed until they form a stiff foam. Gently fold the whites into the cheese, then whip everything together for about 10 minutes until light and fluffy.

  5. Preheat the oven to 150°C (about 300°F). Separately, mix the remaining sugar with the cherries. Lightly toast the walnuts in a dry skillet and chop them.

  6. Take the dough out of the refrigerator and roll it out to fit your baking pan. Lay the dough into the pan.

  7. Spread half of the cheese mixture over the dough and sprinkle it evenly with the walnuts and cherries. Distribute the rest of the cheese mixture on top.

  8. Bake the pie for about 45 minutes at 150°C. Remove the finished pie from the oven and let it cool completely.

  9. Serve the pie chilled — this way the filling becomes firmer and the flavor opens up more fully.
