There’s something deeply comforting about a steaming cup of coffee brewed with fresh ginger and warm cloves, softened with a generous pour of hot milk. This is the kind of drink you reach for when the morning feels a little gray, when your hands need warming, or when an ordinary cup of coffee just won’t do. The ginger adds a gentle heat that lingers on the tongue, the cloves bring a sweet, aromatic depth, and the milk rounds everything out into something silky and soothing. Best of all, you can have it ready in about fifteen minutes with ingredients you likely already have in your kitchen.

Spiced coffee has a long and well-traveled history. Across Eastern Europe and into the Middle East, cooks have long understood that coffee is a wonderful canvas for warming spices. In Ukrainian and broader Slavic home kitchens, brewing ground coffee in a small saucepan rather than a machine is a beloved tradition, one that lets you add aromatics like cinnamon, cardamom, ginger, and clove directly into the pot. This particular combination of ginger and clove leans into the comforting, almost medicinal warmth that families have turned to for generations during cold winters. It’s humble, frugal, and endlessly adaptable, which is exactly why it has stayed in rotation in so many homes.

The secret to getting this right is patience and attention. When you bring the coffee to a boil, watch it like a hawk and pull it off the heat the very moment the first foam rises. Letting coffee boil over not only makes a mess but also draws out a harsh bitterness you don’t want. The same goes for the milk: it climbs the sides of the pan and escapes in seconds, so don’t walk away. Grating the ginger finely rather than slicing it helps release its oils quickly, giving you maximum flavor in a short brew.

Tips & Substitutions

  • No fresh ginger? Use a quarter teaspoon of ground ginger stirred into the water instead.
  • Make it dairy-free by swapping the milk for oat milk or almond milk, which both heat beautifully and keep that creamy body.
  • Sweeten to taste with honey, maple syrup, or a spoonful of sugar added while the coffee is still hot.
  • Add a second spice such as a small cinnamon stick or a cracked cardamom pod for an even cozier cup.
  • Prefer it stronger? Add an extra teaspoon of ground coffee, or use a dark roast for a bolder backbone.

Strain the finished coffee well to catch the grounds and spices, then pour it into your favorite mugs and serve it piping hot to chase away the chill. On a warm afternoon, let it cool and pour it over a tall glass of ice for a refreshing spiced iced coffee instead. Any leftovers keep nicely in a covered jar in the refrigerator for up to two days, ready to be gently rewarmed or enjoyed cold. However you serve it, this is a drink that wraps you in warmth from the first sip to the last.

Ingredients

  • 2 Teaspoons
    ground coffee
  • 400 Millilitres
    water
  • 400 Millilitres
    milk
  • 1
piece of ginger root (1-2 cm)
  • 2
    whole cloves

Instructions

  1. Bring the milk to a boil in a separate small saucepan and remove it from the heat the moment it boils. Don't let it boil over, keep a close eye on it, because milk rises quickly and unexpectedly.

  2. In another saucepan, pour in the water and drop in the cloves. Grate the ginger root on a fine grater and add it to the water. Add the ground coffee as well.

  3. Bring the mixture to a boil over medium heat and remove it from the heat immediately as soon as the first foam appears, so the coffee doesn't boil over and turn bitter.

  4. Pour the hot milk into the coffee, stir gently, and let the drink steep for a few minutes under a lid so the flavors of ginger and clove can develop.

  5. Strain and pour into cups. Serve it hot to warm up, or chilled over ice on a hot day.
