Shchi is the everyday cabbage soup of Russian cooking, and “day-old” names the timing rather than an ingredient: the flavor only assembles after a night’s rest, so serving it the day you cook it means missing the dish. Historically it sat in a Russian masonry oven, which holds hours of steady, falling heat once the fire dies down — exactly the conditions in which fermented cabbage sheds its sharp acidity and turns faintly sweet.

The cabbage is kvashena kapusta: cabbage soured by salt fermentation, which in a Western shop means plain sauerkraut. Buy the refrigerated kind in bags or jars, not the shelf-stable vinegar-pickled sort, which never mellows the same way. The stovetop stand-in for the masonry oven is that long braise with smoked-meat fat, bones and a spoonful of tomato: 90 minutes to 2 hours over low heat until the mass goes soft and reddish. Skip it and you have sour cabbage soup, nothing more. Garlic mashed with salt goes in twice — into the pot at the end, then a clove into each crock — so its raw bite survives to the table.

The pastry lid, brushed with egg and baked right on each half-liter (roughly one-pint) crock, is not decoration: it seals in the steam, and the aroma escapes only when you break the browned dome with your spoon. Eat it straight from the crock. With no smoked meats on hand, smoked ribs or a piece of smoked pork belly will supply part of that depth.

Ingredients

  • chopped fermented (sour) cabbage
  • fat and bones from smoked meats
  • tomato puree (a little)
  • meat broth
  • root vegetables (carrot, parsley root), browned with tomato
  • bay leaf
  • pepper to taste
  • flour roux
  • 3 Pieces
    garlic cloves, mashed with salt
  • meat (a piece per crock)

Instructions

  1. Stew the chopped fermented cabbage with the fat and bones from smoked meats, adding a little tomato puree, until over 1.5-2 hours it turns reddish, soft, and faintly sweet.

  2. Transfer the stewed cabbage to a pot with the broth and cook for about 1 hour.

  3. 30 minutes before the end of cooking, add the root vegetables browned with tomato puree, and 10-15 minutes before, the bay leaf, pepper, and flour roux.

  4. Into the finished shchi, put 2-3 cloves of garlic mashed with salt, and remove from the heat 15 minutes before the end so it can rest.

  5. Ladle the shchi into clay portion crocks (0.5 l each), putting a piece of meat and a clove of garlic with salt in each.

  6. Cover the crock with a piece of rolled-out unsweetened rich pastry, brush with egg, and bake in the oven until the pastry lid browns and domes up.
