You won’t find baking powder, butter, or oil in the batter, just eggs, sugar, and flour whipped into a cloud. That’s the magic: all the lift comes from air you beat into the eggs, so the texture is light as a whisper and ready to soak up syrups, creams, and fruit.

This style of sponge, known across Ukraine and Eastern Europe simply as biskvit, traces its roots to the European Genoise tradition that spread through home kitchens generations ago. In Ukrainian households it became the go-to foundation for birthday tortes and holiday layer cakes, the kind a grandmother would bake the night before a celebration so it could rest and firm up overnight. Beating whole eggs with sugar until they tripled in volume was a point of pride, and the reward was a cake sturdy enough to slice into thin layers yet soft enough to drink in every drop of filling.

The secret to success is patience and a gentle hand. Beat your eggs and sugar long enough, a full 5 to 10 minutes, until the mixture turns pale, thick, and ribbony and grows three to four times in size. When you add the flour, fold it in slowly with a wooden spoon using a top-to-bottom motion so you don’t knock the air out of that beautiful foam. And resist every urge to crack open the oven door while it bakes, since a sudden rush of cool air can make your sponge sink in the middle.

Tips & Substitutions

  • Vanilla: No packet of vanilla sugar? Use 1 teaspoon of pure vanilla extract instead, folded in with the eggs.
  • Flour: Swap up to a quarter of the all-purpose flour for cornstarch to make the crumb even more delicate.
  • Room-temperature eggs whip up taller and faster than cold ones, so let them sit out for 30 minutes first.
  • Splitting layers: Once the cake has rested, use a long serrated knife or a length of thread to slice it into two or three even rounds.
  • Make it lemony: Add a teaspoon of grated lemon or orange zest to the eggs for a bright, fragrant twist.

Once your sponge has rested overnight or for a good 6 to 8 hours, it’s ready to become the heart of any homemade torte. Instructions

  1. Crack the eggs into the bowl of a mixer and add the sugar and vanilla sugar. Meanwhile, preheat your oven to 170°C (340°F) so it's ready for baking.

  2. Beat the mixture on the highest speed for 5 to 10 minutes, until it turns white, thick, and ribbony and has grown about 3 to 4 times in volume.

  3. Sift in the flour and gently fold it through with a wooden spoon, using a top-to-bottom motion so you don't deflate the airy batter.

  4. Line the bottom of a tall baking pan with parchment paper. Grease the whole pan, both the bottom and sides, with oil and dust it well with flour.

  5. Pour the batter into the pan so it fills it about halfway up, then cover the top tightly with foil (grease the underside of the foil with oil so it peels away easily later). Place the pan in the preheated oven.

  6. Bake the cake for 25 to 30 minutes at 170°C (340°F), then lower the temperature to 150°C (300°F) and bake for another 25 to 30 minutes. Resist the temptation to peek inside the oven.

  7. After 50 to 60 minutes, remove the fragrant, fine-pored, fluffy cake and carefully peel away the foil.

  8. Let the cake rest overnight or for 6 to 8 hours, then use the sponge to build your cakes. Enjoy!
