If you’ve ever wanted to make something that tastes like it came from a fancy chocolatier but takes barely any effort, these chocolate truffle candies are exactly that. With just four humble ingredients and no oven required, you’ll turn rich dark chocolate, sweet condensed milk, and ground nuts into melt-in-your-mouth bites rolled in a soft dusting of cocoa. They’re the kind of treat you make on a quiet afternoon and find yourself sneaking back to the fridge for all week long.

The truffle traces its roots to 19th-century France, where confectioners shaped chocolate ganache into knobby little balls that resembled the prized truffle mushrooms foraged from the forest floor. Dusted in cocoa powder to complete the illusion, they became a symbol of indulgence across Europe. This homemade version keeps that classic spirit but simplifies it for any kitchen, swapping cream for condensed milk and folding in ground nuts for a tender, slightly rustic texture that feels wonderfully homey.

The secret to a smooth, glossy truffle mass is in the details. Grind your nuts as finely as you can in a blender or coffee grinder, almost to the texture of flour, so the candies turn out delicate rather than gritty. When you melt the chocolate over a water bath, guard it fiercely from even a single drop of water, since moisture will cause the chocolate to seize into stubborn lumps. Stir the warm chocolate and condensed milk together until perfectly uniform before folding in the nuts, and the mixture will thicken into something easy to roll.

Tips & Substitutions

  • Nuts: Almonds, cashews, and hazelnuts all work beautifully. Use one kind or a blend, and toast them lightly first for a deeper, warmer flavor.
  • Chocolate: A 60% dark chocolate gives the best balance, but bump it up to 70% if you like a more bittersweet edge, or use semisweet for a milder, kid-friendly candy.
  • Condensed milk: For a dairy-free version, reach for sweetened condensed coconut milk, which keeps the same lush sweetness.
  • Coatings: Skip the cocoa and roll the truffles in powdered sugar, shredded coconut, crushed nuts, or cocoa nibs for variety.
  • Flavor boosts: A splash of vanilla, a pinch of sea salt, or a teaspoon of rum or espresso powder stirred into the mass adds lovely depth.

Once the truffles have chilled and set, store them in an airtight container in the refrigerator for up to a week, or freeze them for up to a month. Let them sit at room temperature for a few minutes before serving so the chocolate softens and the flavor blooms. Pile them onto a pretty plate alongside a cup of strong coffee or tea, and you have an effortless dessert that feels like a real treat for guests and family alike.

Ingredients

  • 200 Grams
    dark chocolate (60%)
  • 100 Grams
    cocoa powder
  • 80 Grams
    sweetened condensed milk
  • 100 Grams
    nuts (almonds, cashews, or hazelnuts)

Instructions

  1. First, prepare the nuts. Take almonds, cashews, or hazelnuts (a blend works too) and grind them in a blender or coffee grinder until they reach the texture of fine flour. The finer you grind them, the more delicate the mixture will turn out.

  2. Break the chocolate into pieces and melt it over a water bath. Make sure not a single drop of water gets into the chocolate, or it will seize into lumps.

  3. Pour the condensed milk into the warm melted chocolate and stir well until smooth and uniform.

  4. Add the ground nuts and mix thoroughly once more, so the mass becomes thick and evenly combined.

  5. Pinch off pieces of the mixture weighing about 25 g each and roll them between your palms into neat balls, shaping the candies.

  6. Place the balls on a plate and refrigerate for 3 hours so they set firmly and hold their shape.

  7. Take out the set candies and roll each one in cocoa powder on all sides. Enjoy with a cup of coffee or tea.
