Chicken Salad with Pickled Fruit
This is Soviet banquet food at its most theatrical: shredded boiled chicken, brined cucumbers, and potatoes bound with mayonnaise, then mounded into a neat dome. The dome shape wasn’t decoration for its own sake — a proper mound signaled the cook knew what they were doing, and the garnish went on top.
The flavor rides on contrast. Brined cucumbers (Slavic-style sour cucumbers fermented in salt brine, not sweet American dills — deli half-sours are the closest swap) and the chicken give a salty base, while pickled plums or grapes bring a sweet-sour lift. The meat aspic is a savory gelatin garnish; if you’d rather skip it, a scattering of parsley works just as well.
