Chicken Roll-Ups with Mushrooms
There’s something deeply comforting about pulling a skillet of tender chicken roll-ups with mushrooms off the stove, the kitchen smelling of garlic, dill, and golden-browned meat simmering in a velvety sour cream sauce. If you’ve been looking for a dish that feels special enough for a celebration yet stays easy enough for a weeknight, this is the one you’ll come back to again and again. Each chicken fillet is gently pounded thin, wrapped around a savory filling of sautéed mushrooms, onions, and melty cheese, then braised until the meat turns silky and soaks up every bit of that creamy, herb-flecked sauce.
Dishes like this have long held a warm place at Ukrainian tables, where home cooks have a real gift for transforming humble ingredients into something that tastes festive. Stuffed and rolled meats are a familiar theme in Ukrainian home cooking, and the pairing of mushrooms with sour cream is practically a regional signature. Forest mushrooms were once gathered in late summer and fall, and folding them into a creamy sauce stretched a small amount of meat into a generous, satisfying meal. This version keeps that spirit alive while leaning on ingredients you can find at any market.
The secret to truly tender roll-ups is in two small steps you shouldn’t rush. First, pound the fillets to an even thickness so they cook uniformly and stay juicy. Second, sear the rolls hard to build a deep, golden crust before they ever meet the sauce. That crust locks in flavor and keeps the chicken from drying out during the gentle braise. When you cook the mushroom filling, let all the excess moisture evaporate before you cool it. A wet filling makes the rolls hard to seal and waters down your sauce.
Tips & Substitutions
- Mushrooms: Cremini or button mushrooms work beautifully, but a handful of dried porcini, soaked and chopped, will give you an earthier, more woodsy flavor.
- Sour cream: Full-fat sour cream gives the richest sauce. In a pinch, crème fraîche or Greek yogurt works, though stir yogurt in off the heat so it doesn’t curdle.
- Cheese: Any firm melting cheese like Gouda, Gruyère, or a sharp white cheddar makes a great stand-in for the hard cheese.
- Herbs: No fresh dill? Fresh parsley or chives bring their own bright note, though dill is the classic choice here.
- Toothpicks: If you don’t have toothpicks, tie the rolls with kitchen twine to hold the filling in place while they sear and braise.
Serve these roll-ups hot, spooning the warm sour cream sauce generously over the top. They’re wonderful alongside boiled or mashed potatoes, buttered noodles, or fluffy rice that can catch every drop of sauce. Leftovers keep well in an airtight container in the fridge for up to three days, and they reheat gently on the stovetop with a splash of cream or broth to loosen the sauce. You can also assemble and sear the rolls ahead, then braise them just before serving. However you bring them to the table, this is a dish made for sharing. Enjoy, and as they say in Ukraine, smachnoho (bon appétit)!

Ingredients
Instructions
Rinse the chicken fillets, pat them dry, and gently pound them with a kitchen mallet to an even thickness. Season each piece with salt and pepper on both sides.
Finely chop the mushrooms and dice the onion into small cubes. Heat a little oil in a skillet and sauté the mushrooms with the onion, seasoning lightly with salt and pepper. Cook until the excess moisture has evaporated, then set the filling aside to cool.
Meanwhile, make the sauce: in a bowl, combine the sour cream, finely chopped dill, and garlic pressed through a garlic press. Season with salt to taste.
Onto each prepared fillet, spoon a little of the mushroom and onion filling, then sprinkle the grated hard cheese on top. Roll the meat into tight rolls and secure with toothpicks so the filling doesn't fall out.
Heat the remaining oil in the skillet and sear the rolls until golden brown and crusty on all sides.
Transfer the seared rolls to a pot or deep skillet. Pour the sour cream sauce over them and braise over low heat for 15 to 20 minutes, until the meat is tender and juicy.
Before serving, remove the toothpicks. Serve the chicken roll-ups with mushrooms alongside boiled potatoes, spooning the sauce from the pan over the top. Enjoy your meal!
