    leaf lettuce (about 1 head)
  • 300 Grams
    chicken fillet
  • 1 Piece
    large orange
  • 100 Grams
    feta cheese
  • 50 Grams
    walnut halves
  • 4-5 sprigs fresh parsley (optional)
  • Ground coriander, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Sunflower oil, for frying
  • 8 Tablespoons
    plain unsweetened yogurt, for the dressing
  • 1 Teaspoon
    mustard, for the dressing
  • 1 Teaspoon
    honey, for the dressing

Instructions

  1. Slice the chicken fillet lengthwise in half and rub both sides with salt, black pepper, and ground coriander. Let it sit for a few minutes so the meat absorbs the aroma of the spices.

  2. Heat a small amount of sunflower oil in a skillet, add the chicken fillet, and fry over medium heat for 7-8 minutes per side, until golden and cooked through. Remove the cooked fillet and cut it into small pieces.

  3. Peel the orange thoroughly, removing the skin and white membranes. Divide it lengthwise into 8 segments, then cut each segment into small pieces.

  4. Place the walnut halves in a dry skillet and toast, stirring, until they release their characteristic nutty aroma. If you like, chop them coarsely afterward.

  5. Make the dressing: in a small bowl, combine the yogurt, mustard, and honey and mix thoroughly until smooth.
