A cobbler is a classic cocktail over crushed ice with fresh fruit and berries, raised here to festive level with sparkling wine, cherry liqueur, and cognac. The fruit base and bubbles make it light and elegant.

Cobblers appeared in American bar culture in the nineteenth century and were instantly loved for their generous helping of fruit and crushed ice. This winter version combines strawberry, raspberry, orange, kiwi, and banana with sparkling wine and cognac for depth.

Notes from the Kitchen

  • Fill the glasses two-thirds full with crushed ice; it’s what makes the cobbler truly refreshing.
  • Vary the fruit freely by season; the main thing is that it be ripe and fragrant.
  • Cherry liqueur can be swapped for another berry liqueur; leave out the cognac for a lighter version if you like.

Stir the drink with a tall bar spoon and serve right away with a straw. A cobbler is sipped slowly, as the ice gradually dilutes the cocktail.

  • 200 Grams
    assorted chopped fruit and berries (strawberry, raspberry, orange flesh, kiwi, banana, etc.)
  • 250 Millilitres
    sparkling wine
  • 160 Millilitres
    cherry liqueur
  • 4 Tablespoons
    cognac
  • 4 Tablespoons
    lemon juice
  • crushed ice

Instructions

  1. Fill tall glasses two-thirds full with crushed ice.

  2. Add the fruit and berries to them and pour in all the ingredients.

  3. Stir with a tall bar spoon and serve right away.
