A warm appetizer of caramelized peaches and cool goat cheese is a play of contrasts in just a few minutes. Under the heat, the gentle sweetness of the peaches takes on an almost caramel-like brightness, while the tangy goat cheese refreshes and balances that sweetness.

Pairing fruit with goat cheese is a favorite move in French cooking, especially in Provence, home of the tender chèvre frais. Honey and thyme underscore the summery, almost Mediterranean mood of the dish.

Make It Your Own

Use ripe but firm peaches; overripe ones will fall apart in the pan and release too much juice. Any fresh goat cheese works in place of chèvre, or even a soft brynza; for a milder taste, use ricotta. You can swap the thyme for rosemary or a few drops of lavender honey, which makes the aroma even more pronounced.

Serve the appetizer right away, while the fruit is warm and the cheese still cold; it is exactly this temperature contrast that makes the dish special. Arugula adds a light bitterness that rounds out the composition.

    honey

    butter

Instructions

  1. Cut the peaches or nectarines into wedges. Melt the butter in a well-heated skillet, add the fruit, drizzle with honey, scatter in the thyme leaves, and fry for 3 to 4 minutes. Then carefully turn and fry for another 2 to 3 minutes.

  2. Cut the cheese into large slices and serve with the warm fruit and arugula leaves.
