Berry Yogurt Smoothie
A cool smoothie of strawberries and raspberries blended with plain yogurt is a quick summer drink in which the berry purée provides natural sweetness and vivid color, while the yogurt brings a creamy texture and a slight tang. A few whole raspberries and mint leaves turn the drink into a little dessert in a glass.
The smoothie is a modern snack-drink that grew out of the culture of fresh fruit-and-berry shakes. This version fits perfectly into the height of strawberry and raspberry season, when the berries are at their sweetest and most fragrant, so extra sugar is usually not even needed.
Tips and Swaps
Sort through the raspberries carefully and remove the stems, which can taste bitter in the purée. If the berries are on the tart side, sweeten the smoothie with honey instead of sugar; it dissolves better in a cold drink. Frozen berries work too and give a thicker, almost sorbet-like texture without the need for ice.
Serve the smoothie well chilled, garnished with raspberries and mint leaves. It tastes best right after blending, before it separates.
