Berry Smoothie with Green Tea
Here green tea becomes the base of the smoothie in a matcha-like way: the concentrated infusion adds a gentle astringency and antioxidants, the berries bring acidity and color, and the banana smooths everything to a velvety texture. If you use frozen berries, the drink comes out thick, like a sorbet, without any ice at all.
This is one of the smoothie variations from Yulia Vysotskaya’s “Breakfast School” column in “KhlibSil” for June 2010, where the cocktails were positioned as “fuel for the mind” before a workday or exams.
Handy Tips
- Don’t steep the tea bag longer than 3 minutes – over-steeped green tea gives an unpleasant bitterness.
- Be sure to cool the tea before blending, otherwise the yogurt may curdle.
- Instead of cherry-currant-raspberry, any tart berry will do: blackberry, blueberry, cranberry.
- Soy milk with vanilla makes the drink fully plant-based.
Serve immediately in tall glasses. Because of the anthocyanins, the berries settle quickly, so the drink should be shaken before serving.
