Baked Syrnyky on Ryazhenka with Strawberries
These syrniki are made not with ordinary farmer’s cheese but with baked fermented-milk cheese — it has a creamy texture and a light ryazhenka flavor, so the dessert comes out softer and more velvety. The cheese mixture is pushed through a coarse sieve, and a spoonful of wild strawberries mashed with sugar is tucked inside each one. As they fry, the filling warms through and turns into a warm berry surprise.
They’re served with an extra dish of mashed berries on the side.
Tip: The cheese should be on the dry side: if it’s too wet, it will need more flour.

Add the egg, flour, and sugar to the cheese. Mix and push the mixture through a coarse sieve.
Shape the syrniki, stuffing each with the sugared strawberries. Fry in heated butter over low heat for 3-4 minutes per side.
Serve the syrniki hot, dusted with powdered sugar and garnished with fresh strawberries. Set out a dish of mashed strawberries on the side.
