Start with the filling. Grate two of the apples on the coarse side of a box grater, and cut the rest into small, neat pieces.
Add 2-3 tablespoons of sugar, the cinnamon, and the vanilla sugar to a heated skillet. Stirring constantly over low heat, fully melt the sugar and bring it to a gentle simmer until it forms a golden caramel.
As soon as the caramel begins to bubble, add the grated apples to the skillet, stir, and let them cook over low heat for about 5 minutes, stirring occasionally.
