How to Salt Salo at Home

Dry salting is the traditional method and the forgiving one: no brine, no weighing,
and you cannot over-salt it. There is exactly one way to get it wrong,
and it is in step two.

Step 1. Choose the fat

Back fat, 3–5 cm thick, white or faintly pink, with soft skin. Yellow fat is old;
a hard thick rind means an older animal and a chewy result.

Press it with a finger — good salo is firm but yields slightly.
Fat that feels rubbery will stay rubbery.

Step 2. Use coarse non-iodised rock salt

The one step that decides the outcome. Iodised salt leaves a bitter edge,
and fine “extra” salt with anti-caking agents cures unevenly and can go slimy
on the surface.

Quantity does not need measuring: fat absorbs only what it needs, which is why
this method is nearly impossible to ruin once the salt is right.

Step 3. Cut and stud with garlic

Pieces roughly 10 × 15 cm. Make deep cuts in the flesh side and push in sliced garlic.

Step 4. Roll every surface in salt

With crushed peppercorns and crumbled bay. Be generous — the excess comes off later.

Step 5. Pack skin-side down and wait

In a box or enamel dish, layered with more salt. One day at room temperature,
then 3–4 more in the fridge.

Step 6. Brush off the surplus — do not rinse warm

A dry cloth. Warm water melts the surface fat and ruins the texture;
a quick cold rinse and thorough drying is acceptable if you must.

Seasonings, and when to add them

Garlic and black pepper are the standard. Bay leaf works crumbled rather than whole,
so it makes contact. Coriander seed and paprika are common in western Ukraine,
caraway in the Carpathians.

Timing matters for paprika: add it after curing, when you wrap the salo.
Added before, it burns into the surface and turns bitter.

Where people go wrong

  • Iodised or fine salt. The one unrecoverable mistake.
  • Rinsing with warm water. Melts the surface.
  • Wrapping in plastic film. Fat needs to breathe —
    parchment or cloth, as covered in what
    salo is
    .
