Cut avocado keeps about 24 hours, and mashed rather less.
Around that simple fact has grown a remarkable amount of advice. Sorting it out:
“Leave the pit in and it will not brown”
Half true, and for the wrong reason. The pit has no special property —
it simply covers the flesh underneath it, which is why that patch stays
green while the rest browns.
Worth doing, because it costs nothing. Just do not expect it to protect
the exposed part.
“Store it in water”
It does slow browning. But food-safety guidance advises against it, and there are simpler
methods that work as well. Not the one to reach for.
“Lemon juice is the answer”
This one is true and is the most effective single thing you can do. Brush the cut surface
with lemon or lime juice — it is why guacamole with plenty of lime lasts noticeably longer
than plain mashed avocado.
“Cover the bowl with cling film”
Only if you press the film directly onto the flesh. Stretched across the
top of a bowl it does nothing: the air in the gap is the entire problem.
“Brown avocado has gone off”
No. The brown layer is oxidation. Scrape it off and the flesh underneath is fine.
Actually spoiled looks different: grey or black streaks running through the flesh,
a sour smell, a texture gone stringy and watery.
“Keep avocados in the fridge”
Only once they are ripe. Cold stops an unripe avocado ripening, sometimes
permanently — you end up with a fruit that never softens. Ripen on the counter,
then refrigerate to hold it a few extra days.
To speed ripening, put it in a paper bag with a banana.
How long each state lasts
| How it was cut | Realistic window |
|---|---|
| Half, pit in, wrapped | ~24 hours |
| Half, pit removed | ~12 hours |
| Sliced or cubed | a few hours |
| Guacamole with lime and onion | 1–2 days |
| Whole, ripe | 3–4 days |
And freezing
Only as purée, mashed with lemon juice, air pressed out — up to 4 months.
Whole or sliced avocado thaws to mush.
