Kefir freezes, but you will not want to drink it afterwards. It separates
further than sour cream does — into clear whey and protein flakes — and whisking will not
bring it back. For anything that gets cooked, it is as good as fresh.

In baking the separation is actually convenient: thin kefir disperses into flour more
evenly than thick.
Why it separates so far
Kefir is low in fat, high in water, and its protein has already been partly coagulated by
fermentation. Ice crystals finish the job. There is no emulsion left to rescue, which is why
a blender helps sour cream and does nothing here.
How to freeze it
- Portion by recipe. A cup is the standard quantity for a batch of
pancakes — freeze it in exactly that amount. - Ice cube tray for marinades and small additions.
- Leave 2 cm of headroom.
- Label it: thawed kefir is indistinguishable from whey by sight.
Keeps 2–3 months. Beyond that the sourness sharpens enough to taste
in baking.
Thawing
Fridge only. A microwave coagulates the protein into lumps that never disperse into
batter. For dough you do not need it fully thawed — just liquid.
When not to bother
If the kefir has already turned sharp, freezing will not fix it. Freezing pauses
a product; it does not reverse one.
