Can You Freeze Carrots?

You cut up a bag of carrots, froze them raw, and two months later they thaw limp and
taste of nothing much. Nothing was contaminated and nothing burned —
the carrots simply carried on ageing in the freezer.

Why cold is not enough

Carrots contain enzymes that break down flavour and texture. Freezing slows those enzymes
dramatically but does not stop them. Over a few months they get through the job anyway,
which is why an unblanched carrot is fine at four weeks and disappointing at twelve.

Two minutes in boiling water deactivates them permanently. That is the entire difference
between one month and twelve.

How to do it

  1. Peel and cut them the way you intend to use them.
  2. Boil: 2 minutes for dice or slices, 5 for whole small carrots.
  3. Straight into iced water for the same length of time.
  4. Dry well — wet pieces freeze into a single block.
  5. Freeze in a single layer for two hours, then bag.

The exception worth knowing

Grated carrot for a soffritto base can go in without blanching:
it will be fried anyway, and at a two to three month horizon the enzymes do not have time
to matter.

This is the most useful format in practice. Grate a few kilos in autumn, freeze in portion
bags, and the base for a soup is one minute of work all winter.

What does not work regardless

Cooked carrots come out watery and soft. If you must freeze them cooked,
do it as part of a finished dish — a stew or a puréed soup — rather than on their own.

How long each version keeps

Form Keeps
Blanched, cut up to 12 months
Grated, raw, for frying 2–3 months
Raw, unblanched, cut 1 month — not recommended
Cooked, in a dish 2 months

And cook them from frozen

Straight into the soup, the pan or the oven. Thawed carrot leaks liquid and goes soft
before it ever reaches the heat.
