A sack of beetroot from the market and no cellar. The good news is that beetroot freezes
better than most vegetables — it keeps both colour and flavour. The question is only
which format actually earns its freezer space.
Best: grated raw, as a borscht base
This is the one that repays the effort. Grate a few kilos in autumn and all winter
the soup starts without peeling or grating anything.
- Wash, peel and grate coarsely.
- Bag in 200–300 g portions — one pot of soup each.
- Press flat so a piece can be broken off.
Keeps up to 8 months, and goes into the pan straight from frozen.
Next: cooked and cut, for salads
Boil or roast, cool completely, peel, then cut or grate and freeze.
Warm beetroot creates condensation and an ice crust. Up to 6 months.
Also good: roasted
Roasted beetroot freezes as well as boiled and tastes considerably better.
If the oven is on anyway, do a tray of it.
Not worth it: whole
Hours to thaw and waterlogged at the end. Always cut or grate first.
How long each keeps
| How | For | Keeps |
|---|---|---|
| Raw, grated | Borscht, fried base | up to 8 months |
| Cooked, grated | Salads | up to 6 months |
| Cooked, diced | Sides, salads | up to 6 months |
| Roasted | Salads, pasta | up to 6 months |
The colour survives — the juice does not stay put
Beetroot pigment is damaged by prolonged heat, not by cold, which is why
borscht fades on the
stove and frozen beetroot does not.
But thawing releases juice that stains everything it touches.
Thaw it in a closed container.
And if the sack is very large
Beetroot also stores raw for months in a cool dark place at high humidity —
the freezer is for what will not fit, not for all of it.
