Pungent tomato soup Gazpacho

Gazpacho soup is Spanish dish which is relating to Mediterranean cuisine. This soup recipe will vary your summer menu. There are several steps how to cook this delicious soup no worse than in fabulous restaurants. By the way, tomato soup Gazpacho is pungent and low in calories. That`s why it is very good for diets.


Ingredients

  • 1 Kilogram
    Tomatoes
  • 200 Grams
    Bell pepper
  • 200 Grams
    Cucumbers
  • 50 Grams
    White bread
  • 1-2 cloves
    Garlic
  • 1-2 Tablespoon
    Wine vinegar (or lemon juice)
  • 4 Tablespoons
    Olive oil
  • Salt
  • Pepper
  • Croutons (if you wish)

Instructions

  1. Add boiling water to tomatoes for about 5 -10 minutes. Then cut crosswise each tomato and remove the skin.

  2. Remove the pedicle and cut it into big pieces. Then remove seeds in the pepper and cut it into some pieces too.

  3. Remove the skin from a cucumber and cut it into pieces. Slice a garlic.

  4. Mix the tomatoes, bell pepper, cucumbers, garlic with a blender until creaminess.

  5. Salt the soup, season with the pepper, add the water – soaked bread.

  6. Pour a vinegar, olive oil and blend it one more time (Instead of red, Gazpacho will become orange)

  7. Put the soup into the fridge for 1-2 hours to chill. If you cannot wait, add some ice – cubes to the soup and mix it with blender. Then serve it with the croutons.
